Vinification
Same vinification as white Burgundy wines on this very special Cuvée produced from a selection of old vines. Short skin maceration provides this wine with a typical variety of flavours. After a process of slow and soft pressing only the best juices are extracted. After the press, the juice is directly introduced into oak barrels where the fermentation takes place. Then this wine is aged during 6 months in those barrels.
Tasting notes
Intense yellow colour with gilded reflects. Very complex nose with nice bouquet and slight almonds notes. In mouth, we have a nice toasty flavour with a final on vanilla. The flavour persists long in the mouth and comes with a unique freshness.
Food associations
This wine should be served on fish or seafood dishes. Its complexity and concentration allow opening it also on a Foie Gras or as an appetizer.
