Blending: 50% Syrah - 30 % Grenache – 20% Cabernet Sauvignon

Soil type: Argilo – calcaire

Vinification

Traditional vinification with 3 days of pre-fermentation maceration at low temperature which permit to extract fruity aromas from the grapes. Fermentation in cement tanks with regulated temperature in order to control tannins and colour extraction. Post-fermentation maceration during 6 days. Wine aged 12 months in French oak barrels after malolactic fermentation.

Tasting notes

Deep red ruby colour, limpid. Intense nose on spicy notes typical from a wine produced from Syrah grapes. In mouth, full body, nice structure. Slight ripe fruits flavour revealing an advanced maturity at the harvest. Good balanced wine with long persistence in mouth. This wine can be kept in your cellar easily 5 to 8 years.

Food associations and ageing

This red wine is ready to be to drink now but can also be forgotten in your cellar for few years of bottle ageing. Its powerful structure will get softer and new ageing flavours will appear.Perfect wine to be served on red meat or strong flavour cheeses.
